V Cook—VB’s Post-Workout, Easy to Make Snack

Sticking to one’s New Year’s resolutions to stay healthy and fit can be tough, but there are some easy tricks to keep motivated. One way is to incorporate a healthy and nutritious treat to your post-workout regimen. And a VB favourite is protein-rich egg whites served with avocado. The combination is rich in omega-3 fatty acids benefiting skin health and vitamins C and E for immunity and antioxidants. Below, we asked VB’s friend and chef Andrea Rodriquez, to break down the recipe to keep everyone on track for a healthier 2020.

Egg whites and avocado (serves 2)

Ingredients:

8 egg whites

2 avocados, sliced

Japanese 7 spices (to taste)

Pinch of sea salt (to taste)

Avocado oil spray 

Recipe:

In a frying pan on medium-high heat spray a little avocado oil

When the pan is really hot pour in the egg whites and scramble them until they are a little crispy but not dry

Season with sea salt and Japanese 7 spices and serve with sliced avocado on the side
